For those of you who love Chicken Salad, here is a great recipe I came up with:
First:
thaw out 2 chicken breast
cut in half long ways
salt, pepper and coat with olive oil
put in glass dish with some water
bake 350 for 45 mins
turn over and bake an additional 10 mins
*REFRIGERATE OVER NIGHT*
Next Day:
cut up chicken using a knife
cut into preferable pieces
add...
1/4 red apple diced up (with peel is good too)
1 cap full of lemon juice
handful of almonds-sliced or slivered
1 ts relish
2 Tb ranch dressing
1 Tb miracle whip or mayo
Refrigerate again until ready to serve
great with crackers, on bread, or served on a warm sun dried tomato wrap
*Chicken is easier to cut when refrigerated overnight.
*It sounds complicated, but it's super easy and well worth it
