PUMPKIN CHOCOLATE CHIP COOKIES

I made this recipe a couple of days ago. It is super yummy. It calls for while sugar but I substituted brown sugar instead.

1 c. canned pumpkin (not pumpkin pie mix)
1 c. sugar or 1 1/2 c. brown sugar
1/2 c. olive oil
1 egg
1 ts. vanilla
2 c. all purpose flour
2 ts. baking powder
1 ts. cinnamon
1/8 ts. nutmeg
1/2 ts. baking soda
1 ts. milk
1 c. chocolate chips
1/2 c. chopped walnuts
  • Preheat oven 350
  • Mix pumpkin, sugar, oil, egg and vanilla together
  • In a separate bowl combine: flour, baking powder and soda, cinnamon and nutmeg
  • Stir into pumpkin mixture and add milk
  • Stir in Chocolate chips and walnuts
  • Place dough on cooking sheet about 1 inch apart
  • Bake 8-10 mins and place on cooling rack

Once cooled you can add cream cheese frosting on top. I also added a few sprinkles of brown sugar on the top before I placed in the over. You could probably sprinkle cinnamon and sugar too! ENJOY!

Getting to the Heart

To start this blog off right, I think we first need to be introduced. I'm a Campbell, by marriage! But I am Italian by blood. Through the course of my life, I have sat and watched my grandmother and Aunts scurry around the kitchen around holidays, parties and family get togethers. I would sit in a corner watching atleast a dozen short, plump Italian woman go mad trying to prepare meals and desserts to feed the family. And when I say family, atleast 50 would show up hungry and ready to eat! Being one of my favorite pastimes, it has inspired me to continue the "tradition" in my own home. Growing up in a huge family and my husband being one of 7, it seems only right to have a big family of our own. A family where we can carry on the tradition of being together during the holidays, a family that scurries around the kitchen baking whether it be for holidays or just a Sunday afternoon! These are things I cherish the most.


I am a mother of 1 right now! He was born March 14, 2009. The love of my life next to his father of course! Corban Gad is his name and he is the most handsome little fellow I have ever aquainted! With a personality that will make you melt. Very sociable and friendly. Course, he gets it from me!!! Actually, to be quiet honest, I have a temper. But I get it honestly...being Italian and all!

Anyways, I love to bake. It's my passion, my desire. I love to bake especially in the fall and around Christmas time. My favorite time of the year. Who doesn't like to be sitting on the couch, fireplace lit, cold wind blowing by, sipping something hot and eating pumpkin bread? I'm a bit of a romantic as well...incase you couldn't tell!

I am constantly in the kitchen trying to "create" a masterpiece. I believe baking or cooking is an art. It takes motivation, talent, creativity and desire. However, I am a simple baker. I do not do it for a living, atleast not yet! But I want to share with the world my love for food. I believe food brings people closer together. That's how I was raised. Each visit to my grandmother's was always welcomed by something to eat. Her favorite words, "you want me to cook some pancakes?" "No Mawmaw, I just ate." "I'll make a small batch!"
I hope you enjoy these recipes as I have. Some will be old, some will be new. Either way, it will be a fun adventure to see what new recipe we can come up with. Plus, I hope these recipes bring you and someone else closer. I hope that they bring family members closer, friends closer, aquaintences closer and most importantly enemies the closest. We all need friends.
