I made this recipe a couple of days ago. It is super yummy. It calls for while sugar but I substituted brown sugar instead.
1 c. canned pumpkin (not pumpkin pie mix)
1 c. sugar or 1 1/2 c. brown sugar
1/2 c. olive oil
1 egg
1 ts. vanilla
2 c. all purpose flour
2 ts. baking powder
1 ts. cinnamon
1/8 ts. nutmeg
1/2 ts. baking soda
1 ts. milk
1 c. chocolate chips
1/2 c. chopped walnuts
- Preheat oven 350
- Mix pumpkin, sugar, oil, egg and vanilla together
- In a separate bowl combine: flour, baking powder and soda, cinnamon and nutmeg
- Stir into pumpkin mixture and add milk
- Stir in Chocolate chips and walnuts
- Place dough on cooking sheet about 1 inch apart
- Bake 8-10 mins and place on cooling rack
Once cooled you can add cream cheese frosting on top. I also added a few sprinkles of brown sugar on the top before I placed in the over. You could probably sprinkle cinnamon and sugar too! ENJOY!
